dinners made with rotisserie chicken

Prep time: under 30 minutes each
Serves: 4 people, per dinner
Pairs well with: light crisp beer, or a tall glass of cold Perrier with a lime

Sandwich Ingredients:

  • 4 sandwich sized French bread rolls
  • ½ of a rotisserie chicken, shredded into mid sized chunks

Sauté Sauce:

  • 1 Tbsp fish sauce
  • 1 Tbsp soy sauce
  • ¼ tsp. sesame oil
  • 1 tsp. maple syrup
  • 1 tsp. sweet chili sauce

Quick Pickle Ingredients:

  • 1 cup thinly sliced cucumber
  • 1 cup julienned carrot (or just use a regular peeler to shred thinly)
  • ½ cup white vinegar
  • ½ cup rice vinegar
  • 1 cup water
  • 2 Tbsp sugar
  • 1 tsp. kosher salt
  • *garnish* cilantro

Bahn Mi Sauce:

  • ¼ cup mayonnaise
  • 1 tsp. rice vinegar
  • 1 tsp. sweet chili sauce
  • ½ tsp. curry powder
  • ¼ tsp. sriracha sauce

Method:

  1. Start by quick pickling your vegetables. In a small bowl, mix together the vinegars, water, sugar, salt, and give it a good stir.
  2. Add in your carrots and cucumber, making sure they are covered by the liquid and let sit while you make the rest of the dinner. Keep marinating, and then drain off the liquid right before building your sandwich.
  3. In a separate small bowl, make your bahn mi sauce by stirring together the mayo, rice vinegar, sweet chili sauce, and curry powder. Set aside.
  4. In another small bowl, make your sauté sauce by mixing together the fish sauce, soy sauce, sesame oil, maple syrup, and sweet chili sauce.
  5. In a medium nonstick or cast iron skillet, sauté your prepared chicken with the sauté sauce over low-medium heat until heated through and fragrant.
  6. To build your sandwich, spread the bahn mi sauce on your rolls, divide the sautéed chicken between the four rolls, and top with your pickled vegetable and cilantro.
  7. Dig in!

Notes:

  • Costco has the best rotisserie chicken for this recipe due to their robust size.
  • The sauté sauce, as well as the quick pickled veggies, can be made up to a day in advance and kept in the refrigerator (just keep it on the liquid).
  • This recipe can be easily doubled.
  • Rotisserie chickens freeze very well! Buy 1-2 chickens at a time, divide and prep them into dinner sized portions and freeze them in zip lock bags until ready to use.

Prep time: under 30 minutes each
Serves: 4 people, per dinner
Pairs well with: light crisp beer, or a tall glass of cold Perrier with a lime

Ingredients:

  • ½ rotisserie chicken, diced into small chunks
  • 6-8 corn tortillas
  • 1 avocado, sliced
  • ½ cup small, finely diced  white onion
  • ½ cup packed cilantro
  • ½ fresh lime

Sauté sauce:

  • 3 Tbsp. extra virgin olive oil
  • ½ tsp. kosher salt
  • ¼ tsp. smoked paprika
  • ¼ tsp. ground cumin
  • ½ tsp. chili powder

Method:

  1. Make your sauté sauce by whisking together the olive oil, salt, paprika, cumin, and chili powder in a small bowl.
  2. In a medium nonstick or cast iron skillet, sauté the chicken with the sauté sauce over low-medium heat until heated through and seasoned, about 5 minutes. Turn off the heat, and squeeze juice of half of a lime over your chicken and stir to incorporate.
  3. Warm up your corn tortillas, then fill them with the warmed chicken mixture, and top with the diced onion, sliced avocado, and cilantro.
  4. Enjoy with your favorite salsa and chips!

Notes:

  • Costco has the best rotisserie chicken for this recipe due to their robust size.

Wrap #1: The Caprese Wrap

Ingredients:

  • ¼ Cup prepared Ranch dressing such as Hidden Valley
  • 2 Tbsp. prepared pesto
  • 6 slices fresh mozzarella
  • 4-6 slices of tomato
  • 4-6 slices of avocado
  • ¼ cup shredded fresh basil leaves
  • 2 flour tortillas
  • 1-2 cups shredded rotisserie chicken
  • Salt and pepper

Method:

  1. In a small bowl, mix together the ranch dressing and the pesto. Set aside
  2. Lay out your tortillas and put the ranch/pesto down the middle of the tortilla. Alternately, you can mix the ranch pesto mixture in a bowl with the chicken instead.
  3. Place your shredded chicken on top of the dressing mixture down the center of your tortilla. Season your chicken with salt and pepper.
  4. Next, add in the rest of your ingredients being careful not to overfill.
  5. Wrap your tortilla like burrito, tucking in the edges to seal, and serve.

Wrap #2: The Club Wrap

Ingredients:

  • 2 ounces cream cheese, softened to room temperature
  • 1/3 Cup Mango chutney such as trader joe’s brand
  • 4 Tbsp. crumbled cooked bacon, or store bought bacon bits
  • 1-2 cups shredded green leaf lettuce
  • ½ cup diced tomato
  • 2 flour tortillas
  • 1-2 Cups shredded rotisserie chicken
  • Salt and pepper

Method:

  1. Lay out your tortillas and put the cream cheese down the middle of the tortilla. Next, add your mango chutney on top of the cream cheese.
  2. Place your shredded chicken on top of the cream cheese and chutney, down the center of your tortilla. Season your chicken with salt and pepper.
  3. Next, add in the rest of your ingredients being careful not to overfill.
  4. Wrap your tortilla like burrito, tucking in the edges to seal, and serve.

Wrap #3: Sesame Scallion Chicken Wrap

Ingredients:

For the sesame scallion sauce:

  • 1/4 Cup creamy peanut butter
  • 2 Tbsp. soy sauce
  • 1 Tbsp. Rice Vinegar
  • 1 Tbsp. sweet chili sauce
  • 2 tsp. sesame oil
  • 1 tsp. minced fresh garlic
  • 1 scallion sliced, white and green parts
  • Sriracha sauce to taste (optional)

Wrap ingredients:

  • Peanut sauce (see above)
  • 1-2 Cups shredded rotisserie chicken
  • 6 slices of yellow bell pepper
  • 1 cup shredded purple cabbage
  • ½ Cup shredded carrot
  • ¼ Cup thin sliced almonds (can substitute with chopped peanuts or cashews)
  • 6 slices of avocado

Method:

  1. In a medium sized bowl, mix together your sauce ingredients. Once mixed, add in your shredded rotisserie chicken and mix well until all incorporated.
  2. Lay out your tortillas and put the seasoned chicken mixture down the middle of the tortilla.
  3. Next, add in the rest of your wrap ingredients being careful not to overfill.
  4. Wrap your tortilla like burrito, tucking in the edges to seal, and serve.

Notes:

  • These travel well, but make sure to pack in a cooler to keep them from spoiling.
  • They look very cute wrapped in parchment paper not to mention it helps maintain the structure during transportation.
  • For the Caprese and Club wrap, make sure to salt and pepper the rotisserie chicken, don’t miss this step!  The chicken can tend to be bland, and this will add the right amount of seasoning to your wrap.
